About Domaine Dujac

Domaine Dujac in Morey-Saint-Denis farms about 15.5 ha organically and makes seven Pinot Noir grands crus: Clos de la Roche (about 1.95 ha), Clos Saint-Denis (about 1.45 ha), Charmes-Chambertin, Chambertin, Bonnes-Mares, Échezeaux and Romanée-Saint-Vivant. Premiers crus include Vosne-Romanée Malconsorts and Beaumonts and Gevrey-Chambertin Aux Combottes, and leased Puligny-Montrachet vines in Folatières and Combettes add whites. Fermentation uses native yeasts and whole bunches or partial destemming by vintage; stems play a smaller role than before 1999. New oak runs near 100% for grands crus, 60–80% for premiers, about 40% for villages. Quill & Pad found the 2014 Clos Saint-Denis perfumed and silky, with more finesse than the Clos de la Roche.
