About Domaine Henri Boillot
Domaine Henri Boillot owes much of its fame to its whites. The flagship is Puligny-Montrachet Clos de la Mouchère, a 3.91 ha monopole in one block between Perrières and Clavoillon, with vines averaging 60 years or more; it is fine and mineral, with stone fruit and fresh acidity. Other whites include Puligny Perrières and Pucelles, Meursault Genevrières, Corton-Charlemagne and Bâtard-Montrachet. Reds come from Volnay premiers crus such as Caillerets and Chevret, plus Pommard, Beaune and Savigny. Whites ferment in French oak with moderate new wood and careful lees stirring, aiming for precision over richness; reds get gentle extraction, some whole clusters in certain years and restrained new oak.
