About Domaine Sylvain Cathiard

Domaine Sylvain Cathiard et Fils in Vosne-Romanée, now run by Sylvain's son Sébastien, makes Pinot Noir and some Aligoté. The top wine is a 0.17 ha slice of grand cru Romanée-Saint-Vivant; Vosne premiers crus include Aux Malconsorts, bordering La Tâche (vines from 1972–73), Les Suchots, a 0.25 ha plot of Aux Reignots and old-vine En Orveaux, joined by Nuits-Saint-Georges Aux Thorey and Aux Murgers and village Chambolle Les Clos de l'Orme. Recent growth has added Hautes-Côtes de Nuits parcels. Fruit is fully destemmed, fermented on native yeasts with long cuvaisons, and aged with a high share of new oak for the crus before unfiltered bottling; Decanter found the Romanée-Saint-Vivant plush yet refined.
