About Clos des Papes

Clos des Papes, Vincent Avril's Châteauneuf-du-Pape estate, farms 35 ha in 24 parcels biodynamically and at under 20 hl/ha. It makes one red and one white, each from all parcels. The red, roughly 55% Grenache, 30% Mourvèdre and 10% Syrah plus Counoise, Vaccarèse, Muscardin and Cinsault, is destemmed, macerated about three weeks in ceramic-lined concrete, then aged 12 months in foudres with no new wood; it needs years in bottle. The white mixes six grapes in equal shares, rests on fine lees in steel without oak or malolactic, and ages as well as the red.
