About Chateau Ausone
Château Ausone, run by Alain Vauthier and his daughter Pauline, farms about 7 ha of small terraces on a sheltered east-south-east slope at Saint-Émilion, partly on the asteriated limestone plateau and partly on clay-limestone hillside. The vines average 50 years, some a century, and are mainly Cabernet Franc with Merlot. The grand vin opens powerful and mineral from the Cabernet Franc, then shows round, chiselled Merlot and a long, fresh finish. It ferments in oak vats, completes malolactic in barrel and ages up to 22 months in new oak in a limestone cellar. Chapelle d'Ausone, from younger vines, is more Merlot-forward with a touch of Cabernet Sauvignon.
