About Bollinger

Bollinger, the family-run Aÿ house, owns about 160 ha and builds its wines on Pinot Noir, fermented in oak barrels using mainly first-pressing juice. Special Cuvée blends 60% Pinot Noir, 25% Chardonnay and 15% Meunier, mostly from grand and premier crus and largely reserve wine, some kept 7–15 years in magnums; it ages twice the legal minimum, showing baked apple, brioche and walnut. La Grande Année is the barrel-vinified vintage and R.D. is a long lees-aged, recently disgorged vintage. The PN cuvées are blanc de noirs built on one lead cru such as Verzenay. Vieilles Vignes Françaises, from 31 ares of ungrafted, layered Pinot Noir in Aÿ, is rare and powerful.
