About Dom Perignon

Dom Pérignon, the LVMH Champagne brand, makes only vintage wine: a blend of Chardonnay and Pinot Noir whose proportions change each year but have only once gone beyond a 60/40 split. Grapes are chosen from the 17 grands crus plus the premier cru of Hautvillers. Each vintage is released in stages called Plénitudes: the standard Vintage after about eight or nine years on lees, P2 after 15 to 20 years, and the rare P3 after far longer. A Rosé version has existed since 1959. The young 2015 shows roasted, cocoa and floral notes with peach and citrus; with age, Serena Sutcliffe writes, the wine takes on a fresh-toast-and-coffee bouquet.
