About Salon
Salon, owned by Laurent-Perrier alongside sister house Delamotte, makes a single wine: Salon Le Mesnil, a vintage blanc de blancs of pure Chardonnay from the grand cru village of Le Mesnil-sur-Oger. Fruit comes from the house's one-hectare Jardin de Salon and 19 other small Mesnil plots. It uses only the first pressing, ferments it cold in stainless steel and fully blocks malolactic; the wine spends roughly ten years in the cellar before release. It is declared only in exceptional years, about four per decade, at no more than 60,000 bottles; other years go to Delamotte. Notes run to citrus, salty minerality, toast and brioche.
